  • 1 tbsp olive oil
  • 8 sausages sausages
  • 2 large onions thinly sliced
  • 1 tsp minced garlic
  • 2 tbsp unsalted butter
  • 3 tbsp plain flour
  • 2 cups beef stock
  • 1 sprig thyme, leaves only optional
  • 1 tsp Worcestershire sauce
  • ½ tsp black pepper
  • to taste Salt Salt

Method
 

  1. Heat oil in a pan, brown sausages on all sides (6–8 min). Remove and set aside.
  2. Add sliced onions to pan. Cook 3–4 min until soft and golden.
  3. Stir in garlic. Add butter and melt.
  4. Stir in flour to make a paste. Cook 1 min.
  5. Gradually whisk in stock. Simmer 2–3 min.
  6. Add thyme, Worcestershire, pepper, and salt. Taste.
  7. Return sausages to gravy. Simmer 2 min.
  8. Serve hot with mashed potatoes and greens.
