Ingredients
  

Eggs
  • 6 pieces eggs
  • 1.5 tbsp unsalted butter
  • Pinch sea salt
  • 1 tbsp crème fraîche (optional)
  • 2 slices fresh chives (optional)
  • 2 slices thick toasted bread

Method
 

  1. Crack eggs into a cold nonstick saucepan with butter.
  2. Place over medium-high heat, stir constantly with a rubber spatula.
  3. When eggs begin to thicken (~30 sec), remove from heat while stirring.
  4. Continue on and off the heat, stirring constantly.
  5. When eggs are 90% cooked, remove from heat fully.
  6. Stir in salt and crème fraîche (if using). Serve over toast with chives.
