Ingredients
  

Protein
  • 3 lbs boneless, skinless chicken breast, cubed
Coconut Milk
  • 2 cans 14 oz full-fat coconut milk
Vegetables
  • 2 pcs onions, finely diced
Spices and Condiments
  • 4 tbsp tomato paste
  • 4 tbsp fresh garlic, minced
  • 4 tbsp fresh ginger, minced
  • 1 tbsp ground cumin
  • 1 tbsp ground turmeric
  • 1 tbsp ground coriander
  • 1 tbsp curry powder
  • 1 tbsp garam masala (optional)
  • 4 pcs bay leaves
  • 1 stick cinnamon stick
Salt and Pepper
  • to taste Salt and pepper

Method
 

  1. Add cubed chicken to slow cooker.
  2. Add onions, tomato paste, garlic, ginger, all spices, bay leaves, and cinnamon to the slow cooker.
  3. Pour in coconut milk and stir well.
  4. Cook on high for 2.5–3 hours or low for 4–5 hours, until chicken reaches 165°F.
  5. Remove bay leaves and cinnamon. Season again to taste.
  6. Serve hot with rice or naan.
