Main Ingredients
  • 6 eggs large
  • 1 can black beans drained
  • 4 corn tortillas small
  • 2 cloves garlic minced
  • 1 tsp chili powder
  • 1 tsp smoked paprika
  • 2 tbsp chili oil or olive oil + chili flakes
  • 1 avocado sliced
  • lime for serving

Method
 

  1. Heat chili oil in a pan and crisp tortillas on both sides. Set aside.
  2. In the same pan, cook garlic, then add black beans and spices. Smash and cook 5 minutes.
  3. Wipe pan, add oil, and fry eggs sunny-side with smoked paprika.
  4. Stack tortilla, beans, egg, salsa, and toppings.
