Ingredients
  

Meat
  • 700 g fillet of beef
Oil and Butter
  • 1 tbsp olive oil for frying
  • 1 tbsp butter
Vegetables & Herbs
  • 1 head garlic halved horizontally
  • 3–4 sprigs fresh thyme
  • ½ red onion finely chopped red onion
  • 2 red chillies deseeded and chopped
  • 250 g mixed cherry tomatoes halved
  • 1–2 tsp sherry vinegar
  • Small handful fresh basil shredded
Condiments
  • 3 tbsp mayonnaise
  • 3 tsp wholegrain mustard
Bread
  • 12 slices ciabatta about 1.5cm thick
  • 2–3 tbsp olive oil for brushing and toasting
Optional
  • to taste baby gem lettuce to serve

Method
 

  1. Preheat oven to 200°C. Sear the seasoned steak 1–2 mins per side, add garlic, thyme, and butter, then baste. Roast for 15–17 mins, rest covered.
  2. Heat olive oil, sauté onion and chillies 5 mins, add tomatoes and cook 6–8 mins. Add sherry vinegar, cook 6 mins, stir in basil, season, then cool.
  3. Mix mayonnaise and mustard, adjust to taste.
  4. Brush ciabatta slices with olive oil and griddle until golden, 1–2 mins per side.
  5. Slice rested steak thinly, spread mayo on bread, add lettuce, steak, relish, then top with another slice. Serve warm.
