- Preheat oven to 200°C. Sear the seasoned steak 1–2 mins per side, add garlic, thyme, and butter, then baste. Roast for 15–17 mins, rest covered.
- Heat olive oil, sauté onion and chillies 5 mins, add tomatoes and cook 6–8 mins. Add sherry vinegar, cook 6 mins, stir in basil, season, then cool.
- Mix mayonnaise and mustard, adjust to taste.
- Brush ciabatta slices with olive oil and griddle until golden, 1–2 mins per side.
- Slice rested steak thinly, spread mayo on bread, add lettuce, steak, relish, then top with another slice. Serve warm.
