Ingredients
  

Sauce ingredients
  • 480 ml heavy cream
  • 99 g dark brown sugar
  • 2.5 tbsp golden syrup
  • Pinch salt
Pudding base
  • 170 g pitted dates, chopped
  • 240 ml water
  • 1 tsp baking soda
Dry ingredients
  • 150 g all-purpose flour
  • 1 tsp baking powder
  • 0.5 tsp fine sea salt
Cake batter
  • 57 g unsalted butter
  • 149 g granulated sugar
  • 2 eggs eggs, at room temperature
  • 1 tsp vanilla extract

Method
 

  1. Preheat oven to 175°C (350°F) and butter an 8½-inch dish.
  2. Combine cream, brown sugar, golden syrup, and salt; simmer 5 minutes.
  3. Pour half into dish and freeze; reserve the rest.
  4. Boil dates and water; stir in baking soda.
  5. Mix flour, baking powder, and salt separately.
  6. Beat butter and sugar until fluffy; add eggs, vanilla, dry ingredients, and date mixture, mixing gently.
  7. Pour batter into dish over sauce layer.
  8. Bake for 50 minutes until moist crumbs form.
  9. Cool slightly; serve warm with toffee sauce and whipped cream or ice cream.
