Ingredients

  • 2 cups fresh strawberries
  • 1 tbsp granulated sugar
  • ½ tsp vanilla extract
  • 3 egg whites egg whites (room temp)
  • Butter + sugar for ramekins butter and sugar for ramekins

Method
 

  1. Preheat oven to 350°F (175°C). Grease ramekins with butter and dust with sugar.
  2. Blend strawberries into a smooth puree (1 cup). Stir in sugar and vanilla.
  3. Beat egg whites to medium peaks.
  4. Lighten the puree with a spoonful of whites, then fold into remaining whites.
  5. Fill ramekins, level with spatula, clean rims.
  6. Bake for 15 minutes until puffed and golden.
  7. Serve immediately from the oven.
