Ingredients
  

Dough
  • 1.5 tsp baking powder
  • ½ tsp salt
  • 90 grams plain flour
  • 3 large eggs
  • 500 grams sweetcorn frozen or fresh
  • 6 spring onions spring onions, finely sliced
  • 20 grams chopped coriander
  • 10 grams diced green chilli
  • Butter for frying butter for frying
  • 1 red onion red onion
  • 1 red pepper red pepper
  • 30 cherry tomatoes cherry tomatoes
  • 2 ripe Hass avocados ripe Hass avocados
  • 20 ml lemon juice
  • 10 grams chopped coriander
To serve
  • Crème fraîche to serve crème fraîche

Method
 

  1. Sweat sliced red onion in oil until soft. Char the red pepper and tomatoes until blistered. Dice, combine, and reduce into relish.
  2. Smash avocados with lemon juice and coriander. Season.
  3. Mix flour, baking powder, salt, eggs, corn, onions, coriander, chili. Adjust thickness with milk if needed.
  4. Fry spoonfuls in butter over medium-high heat, 2–3 mins each side. Don’t crowd the pan.
  5. Plate with relish, avocado, and crème fraîche. Serve hot.
