Ingredients
  

Protein
  • 4 fillets salmon fillets (skin on)
Oil
  • 1 tsp olive oil
Vegetables
  • 1 bunch broccolini
  • 200 g sugar snap peas
  • 1 cup edamame
Aromatics
  • 2 cloves garlic, grated
Noodles
  • 270 g soba noodles
Sauce
  • ¼ cup soy sauce
  • ¼ cup brown sugar
  • 1 tbsp cornflour
  • 2 tbsp honey
  • ½ tsp ground ginger
Garnish
  • 2 tbsp sesame seeds
Salt and pepper
  • Salt and pepper

Method
 

  1. Boil water, cook soba noodles for 4 minutes, rinse and lightly oil.
  2. Prep broccolini, sugar snap peas, edamame, and grate garlic.
  3. Whisk water, soy, sugar, cornflour, honey, ginger, and garlic; simmer 5 mins till thick.
  4. Sear salmon skin-side down in olive oil, 1-2 minutes per side, remove.
  5. Flash-cook vegetables in same pan, 2 minutes.
  6. Toss noodles and veg with some sauce. Plate noodles, top with salmon, drizzle sauce, sprinkle sesame seeds.
