Method
- Combine ginger, garlic, soy, maple, mirin, and olive oil in a bowl.
- Season salmon, pour marinade over, chill 20–120 mins.
- Heat pan, add oil, place salmon skin side down.
- Cook 2 mins, pour in marinade, cook 1 more min.
- Flip, cook 3–4 mins, basting. Add water if glaze thickens too fast.
- Plate and spoon over sauce. Serve hot.
