Ingredients
  

Marinade
  • 2 cm fresh ginger finely sliced
  • 2 garlic cloves finely sliced
  • 3 tbsp soy sauce
  • 2 tbsp maple syrup
  • 1 tbsp mirin
Other Ingredients
  • Olive oil for frying
  • 500 g salmon fillets skin on
  • Sea salt and pepper

Method
 

  1. Combine ginger, garlic, soy, maple, mirin, and olive oil in a bowl.
  2. Season salmon, pour marinade over, chill 20–120 mins.
  3. Heat pan, add oil, place salmon skin side down.
  4. Cook 2 mins, pour in marinade, cook 1 more min.
  5. Flip, cook 3–4 mins, basting. Add water if glaze thickens too fast.
  6. Plate and spoon over sauce. Serve hot.
