Method
- Season beef with salt and pepper. Brown in two batches with 30ml oil each. Set aside.
- Sauté jalapeños and onion in remaining oil for 10 minutes.
- Add garlic and spice mix. Stir until fragrant.
- Add beef, tomatoes, tomato paste, chipotle, stock, and bay leaves. Stir and simmer uncovered for 3–3.5 hours, stirring occasionally.
- Remove bay leaves. Adjust seasoning and serve hot with toppings.
