Ingredients
  

Meat
  • 1814 g beef chuck roast, cut into chunks
Seasoning
  • Salt + black pepper Salt + black pepper
Oil
  • 90 ml olive oil, divided
Vegetables
  • 3 jalapeños jalapeños, seeded + diced
  • 1 large yellow onion, diced
  • 5 cloves garlic cloves, minced
Spices & Condiments
  • 1 pepper chipotle pepper in adobo
  • 45 g tomato paste
  • 30 g chili powder
  • 30 g smoked paprika
  • 15 g cumin
  • 15 g dried oregano
  • 4 g chipotle chili powder
  • 4 g unsweetened cocoa powder
  • 2 g ground coriander
  • 1 g cinnamon
Liquids
  • 794 g crushed tomatoes
  • 45 g tomato paste
  • 960 ml beef stock
Bay Leaves
  • 2 leaves bay leaves

Method
 

  1. Season beef with salt and pepper. Brown in two batches with 30ml oil each. Set aside.
  2. Sauté jalapeños and onion in remaining oil for 10 minutes.
  3. Add garlic and spice mix. Stir until fragrant.
  4. Add beef, tomatoes, tomato paste, chipotle, stock, and bay leaves. Stir and simmer uncovered for 3–3.5 hours, stirring occasionally.
  5. Remove bay leaves. Adjust seasoning and serve hot with toppings.

Notes
