Ingredients
  

Vegetable Oil
  • 2 tbsp vegetable oil
Chicken Breast or Thighs
  • 1 lb chicken breast or thighs, sliced
Small Onion
  • 1 small small onion, chopped
Fresh Ginger
  • 1 tbsp fresh ginger, minced
Garlic Cloves
  • 4 cloves garlic cloves, minced
Thai Red Curry Paste
  • 3 tbsp Thai red curry paste
Coconut Milk
  • 13.6 oz full-fat coconut milk
Fish Sauce
  • 1 tbsp fish sauce
Brown Sugar
  • 2 tsp brown sugar
Green Beans
  • 6 oz green beans
Red Bell Pepper
  • 1 red red bell pepper, sliced
Cilantro
  • Cilantro, for garnish
Lime Juice
  • 1 tbsp lime juice
Thai Basil
  • ½ cup Thai basil

Method
 

  1. Heat oil in a pan. Sear chicken 3 mins, set aside.
  2. Lower heat, sauté onion, garlic, and ginger for 1 min.
  3. Stir in curry paste. Cook 1 min.
  4. Add coconut milk, fish sauce, sugar. Simmer gently.
  5. Add chicken, beans, pepper. Simmer 8–10 mins.
  6. Off heat, stir in basil and lime juice.
  7. Serve over rice, garnish with cilantro.
