Method
- Heat oil in a pan. Sear chicken 3 mins, set aside.
- Lower heat, sauté onion, garlic, and ginger for 1 min.
- Stir in curry paste. Cook 1 min.
- Add coconut milk, fish sauce, sugar. Simmer gently.
- Add chicken, beans, pepper. Simmer 8–10 mins.
- Off heat, stir in basil and lime juice.
- Serve over rice, garnish with cilantro.
