Method
- Preheat oven to 200°C (400°F).
- Toss tomatoes, garlic (unpeeled), and chili with olive oil. Spread on a tray.
- Roast for 15–20 minutes until tomatoes burst and edges caramelize.
- Let cool slightly. Squeeze garlic from skins.
- Blend everything with torn basil and vinegar. Season with salt and pepper.
- Taste and adjust basil, vinegar, or chili as needed.
Notes
Use parchment paper to avoid sticking and simplify cleanup. For a smoother texture, use a high-speed blender.
