- Mix vinegar, water, sugar, and salt. Add sliced onion and refrigerate for at least an hour.
- Combine mayo, truffle oil, minced garlic, and black pepper. Refrigerate until ready.
- Form beef into two patties, season with salt and pepper. Sear 2–3 mins per side, add cheese last minute to melt.
- Toast buns cut-side down until golden.
- Assemble: bottom bun, lettuce, patty, pickled onions, aioli, top bun. Serve immediately.
