Ingredients
  

Buns
  • 2 pieces brioche buns
Ground Beef
  • 1 lb 80/20 ground beef
  • 2 slices Gruyère cheese
Lettuce
  • 2 leaves Boston lettuce leaves
  • Salt and black pepper Salt and black pepper, to taste
  • ½ red onion red onion, thinly sliced
Pickling Liquid
  • 1 cup apple cider vinegar (240ml)
  • ½ cup water (120ml)
  • 1 tbsp sugar (15g)
  • 2 tsp kosher salt (10g)
Truffle Aioli
  • ¼ cup mayonnaise (60g)
  • tsp truffle oil (7.5ml)
  • 1 clove garlic, minced
  • ¼ tsp black pepper

Method
 

  1. Mix vinegar, water, sugar, and salt. Add sliced onion and refrigerate for at least an hour.
  2. Combine mayo, truffle oil, minced garlic, and black pepper. Refrigerate until ready.
  3. Form beef into two patties, season with salt and pepper. Sear 2–3 mins per side, add cheese last minute to melt.
  4. Toast buns cut-side down until golden.
  5. Assemble: bottom bun, lettuce, patty, pickled onions, aioli, top bun. Serve immediately.
