Method
- Preheat oven to 425°F (220°C).
- Boil peas, carrots, beans, and celery for 8 mins. Drain and set aside.
- Melt butter, cook onion until soft (5 mins).
- Stir in flour and spices. Cook 1 min. Whisk in broth and milk. Thicken (3–5 mins). Remove from heat.
- Stir in turkey and vegetables. Season to taste.
- Line pie dishes with bottom crusts. Divide filling. Add top crusts. Seal edges and cut slits.
- Bake 15 mins. Cover crust if browning too fast. Bake 15–20 mins more. Rest 10 mins. Serve hot.
