Ingredients
  

Dairy
  • 300 ml full-fat milk
Eggs
  • 4 large eggs, separated
  • 45 g caster sugar plus extra for dusting
  • 50 g plain flour
  • 2 tsp vanilla extract
  • Pinch salt
  • Knob melted butter for ramekins
  • Icing sugar to dust
  • Vanilla ice cream optional Vanilla ice cream for serving

Method
 

  1. Preheat oven to 410°F. Heat a tray inside.
  2. Butter ramekins and dust with sugar.
  3. Simmer milk over medium-low heat.
  4. Whisk egg yolks with 3 tbsp sugar until pale, add flour.
  5. Gradually add hot milk to yolks, whisk, then add remaining milk.
  6. Beat egg whites with salt, gradually add sugar, whisk to stiff peaks.
  7. Fold whites into base gently, in thirds.
  8. Divide mixture into ramekins, smooth tops, and rim.
  9. Bake for 20–25 minutes on hot tray.
  10. Dust with icing sugar and serve immediately.
