Ingredients

  • 140 g unsalted butter, softened plus more for greasing
  • 75 g caster sugar
  • 75 g light brown sugar + 1 tsp for topping
  • 2 units eggs
  • 140 g self-raising flour
  • 1 tsp baking powder
  • Pinch sea salt
  • 75 g pecans, chopped
  • 75 g dark or semisweet chocolate chips
  • 3 ripe bananas very ripe bananas (2 mashed, 1 sliced for topping)
  • 1-2 tbsp maple syrup (for glaze)

Method
 

  1. Preheat oven to 350°F (160°C fan). Grease and line a 2 lb loaf tin.
  2. Beat butter and sugars until fluffy.
  3. Add eggs one at a time, mixing well.
  4. Fold in flour, baking powder, and salt gently.
  5. Mix in mashed bananas, pecans, and chocolate chips.
  6. Pour batter into tin, top with sliced banana, sprinkle brown sugar, and bake for 50 mins.
  7. Brush with maple syrup while warm, cool for 10-20 mins, then transfer to wire rack.
