Ingredients
  

Base
  • 1 large egg
  • 45 g mayonnaise
  • 10 g minced green onions
  • 20 ml lemon juice
  • 1 tsp dried tarragon
  • tsp red pepper flakes
  • 225 g crabmeat (lump or mixed)
  • 60 g crushed buttery crackers (Ritz, etc.)
  • 15 g butter (for frying)

Method
 

  1. Whisk egg, mayo, green onions, lemon juice, tarragon, and red pepper flakes.
  2. Gently fold in crabmeat, keeping chunks whole.
  3. Gradually add crushed crackers until mixture holds without feeling dry.
  4. Form into 4 patties and chill for 15–20 minutes if desired.
  5. Heat butter in skillet over medium heat and cook cakes 5–6 minutes per side until golden.
  6. Serve hot with sauce, salad, or as desired.
