- Take steaks out of the fridge 30–60 minutes early and season generously with salt and pepper.
- Preheat oven to 360°F and heat a cast iron skillet on high for 3–5 minutes.
- Add oil and sear steaks 2–3 minutes per side until crusty and golden.
- Turn off heat, add butter, garlic, and rosemary. Baste the steak for 30 seconds.
- Transfer skillet to oven and bake 2–8 minutes based on desired doneness.
- Remove from oven, cover with foil, and rest 5–10 minutes.
- Serve with the flavorful butter and garlic.
