  • 2.27 kg whole duck
  • 10 g paprika
  • 10 g salt
  • 2 g black pepper
  • 115 g unsalted butter, melted divided

Method
 

  1. Preheat oven to 375°F (190°C).
  2. Mix paprika, salt, and pepper. Pat the duck dry, then rub the seasoning all over.
  3. Place the duck in a pan and roast for 1 hour.
  4. Spoon 57g melted butter over the duck. Roast for another 45 minutes.
  5. Pour remaining butter over the duck. Roast for 15 minutes or until skin is golden and internal temp reaches 165°F (75°C).
  6. Rest for 10 minutes, then carve and serve.
