- Heat oil and butter in a skillet over high. Brown chicken thighs for 3-4 mins per side.
- Lower heat. Season with salt and pepper. Add garlic and thyme.
- Add balsamic vinegar, soy sauce, and water. Simmer for 6-7 mins until reduced by half.
- Add lemon slices and honey. Toss chicken to coat in glaze.
- Sprinkle parsley, spoon sauce over, and serve.
