Ingredients
  

Eggs
  • 3 pieces eggs
  • 0.25 cup granulated sugar divided
  • 0.25 cup heavy cream divided
  • 2 small red apples cores removed and chopped
  • 1 tablespoon unsalted butter
  • 1 tablespoon apple cognac
  • 3 slices white sandwich bread thick slices
  • 1 tablespoon olive oil
  • Thimbleberry jam Thimbleberry jam
  • 1.5 tablespoons crème fraîche

Method
 

  1. Whisk eggs with 1½ tbsp sugar, then add heavy cream. Set aside.
  2. Cook apples with sugar and butter until soft, then add cognac and a splash of cream. Simmer until jammy.
  3. Dip bread slices briefly in egg mixture.
  4. Toast bread in olive oil and butter until golden on both sides. Remove from pan.
  5. Assemble sandwich: spread jam, add apples, then top with another bread slice. Repeat for layers.
  6. Top with crème fraîche, drizzle jam, and garnish with apples. Serve warm.
