Ingredients
  

Meat
  • 1.1 kg baby back ribs
Dry Rub
  • 2 tbsp brown sugar
  • 2 tsp smoked paprika
  • 2 tsp Morton kosher salt
  • 1 tsp granulated garlic
  • 1 tsp granulated onion
  • 0.25 tsp ground ginger
  • 0.25 tsp Chinese five spice
  • 0.25 tsp white pepper
Glaze
  • 1 tbsp sesame oil
  • 10 cloves garlic, minced
  • 1 tbsp grated fresh ginger (or 1 tsp ground ginger)
  • 0.67 cup brown sugar
  • 0.5 cup soy sauce
  • 0.33 cup rice vinegar
  • 0.25 cup honey
  • 1 tsp red pepper flakes

Method
 

  1. Preheat oven to 275°F (135°C).
  2. Remove silver skin, cut ribs, pat dry.
  3. Mix dry rub, coat ribs evenly.
  4. Wrap in foil, place on baking sheet.
  5. Bake for 2–2.5 hours.
  6. Heat sesame oil, sauté garlic + ginger 2 mins.
  7. Add glaze ingredients, simmer 5–7 mins until glossy.
  8. Unwrap ribs, brush with glaze, broil 2–3 mins.
  9. Slice, serve with extra glaze, rest 5 mins.
