Meat
  • 1 piece hanger steak
  • to taste none Kosher salt and black pepper
Cooking Oil
  • 2 tablespoons olive oil
Tortillas
  • 4 pieces blue corn tortillas
Produce
  • 1 piece avocado, sliced
  • 1 small red onion, diced
  • 3 scallions sliced
  • 1 piece tomato, diced
  • 1 clove garlic, minced
  • 1 piece lime (zest + juice)
  • 1 bunch bunch cilantro, chopped
Pico de Gallo
  • 1 batch pico de gallo (onion, lime, chile, scallions, tomato, garlic, cilantro, nopal)

Method
 

  1. Heat grill and skillet to high.
  2. Season and sear steak for 2 minutes per side.
  3. Grill cactus pad until lightly charred, dice.
  4. Make pico: mix onion, lime, chile, scallions, tomato, garlic, cilantro, and diced nopal.
  5. Toast tortillas briefly.
  6. Slice steak across grain.
  7. Assemble tacos with pico, steak, avocado, crema, and fresh lime.
