Ingredients
  

Base
  • 50 g butter (or olive oil for vegan option)
  • 1 each onion, diced
  • 4 cloves garlic, minced
  • 1.5 tbsp fresh ginger, minced
  • 2 tbsp curry powder
  • 0.5 tsp turmeric powder
  • 0.5 tsp cayenne pepper (optional, for heat)
  • 1.25 tsp salt
  • 0.5 tsp black pepper
Main ingredients
  • 1 cup dried lentils (green or brown)
  • 400 ml coconut milk
  • 400 g canned tomatoes
  • 750 ml water
  • Cooked basmati or cauliflower rice for serving
  • Plain yogurt for serving
  • to taste Fresh coriander (cilantro), chopped

Method
 

  1. Melt butter in a large pot. Add onion, garlic, and ginger; cook for 10 minutes until soft.
  2. Add curry powder, turmeric, and cayenne; stir for 1–2 minutes until fragrant.
  3. Stir in lentils, coconut milk, tomatoes, water, salt, and pepper. Bring to a boil.
  4. Reduce heat, cover, and simmer for 30 minutes.
  5. Uncover and cook for another 10 minutes, stirring occasionally until thickened and lentils are tender.
  6. Stir in half the chopped coriander. Serve over rice with yogurt and remaining coriander.

Notes
