Ingredients
  

Meat
  • 2 pieces Ribeye or New York Strip steaks about 1–1.5 inches thick
  • 15 ml avocado oil
  • 2.5 g salt
  • 1 g freshly cracked black pepper
  • 30 g unsalted butter
  • 2 sprigs fresh rosemary or thyme
  • 2–4 cloves garlic, smashed

Method
 

  1. Let steaks sit at room temperature for 30 minutes. Pat dry.
  2. Season steaks heavily with salt and black pepper.
  3. Heat skillet over medium-high until lightly smoking. Add oil.
  4. Sear steaks without moving for 4 minutes.
  5. Flip and sear another 4 minutes.
  6. Lower heat, add butter, garlic, and herbs. Baste for 1–2 minutes.
  7. Check internal temp: 120°F rare, 130°F medium-rare, 140°F medium.
  8. Rest steaks for 5 minutes before slicing.
  9. Spoon butter and herbs over steaks to serve.
