Method
- Let steaks sit at room temperature for 30 minutes. Pat dry.
- Season steaks heavily with salt and black pepper.
- Heat skillet over medium-high until lightly smoking. Add oil.
- Sear steaks without moving for 4 minutes.
- Flip and sear another 4 minutes.
- Lower heat, add butter, garlic, and herbs. Baste for 1–2 minutes.
- Check internal temp: 120°F rare, 130°F medium-rare, 140°F medium.
- Rest steaks for 5 minutes before slicing.
- Spoon butter and herbs over steaks to serve.
